Why 3 portion sizes?

Nous avons mené une analyse de quatre semaines sur nos déchets alimentaires. Conclusion : des portions trop copieuses, dont une part considérable finit dans l'usine de biogaz. Nous avons donc décidé de surveiller de près les quantités servies, afin d'utiliser au mieux ces précieux aliments. Règles pour les portions XL : réservées exclusivement à une seule personne et pas de plats à emporter / emport des restes. We conducted a 4-week analysis of our food waste. The result: portions were too large, with a significant amount of food ending up in the biogas plant. As a result, we decided to pay close attention to portion sizes in order to make the best use of valuable food. Rules for XL portions: Exclusively for 1 person & no takeout / leftovers to go. Our staff will be happy to provide information upon request about ingredients in our dishes that may trigger allergies and/or intolerances. We receive fish already filleted; however, this does not rule out the possibility of fish bones being present.

🍽️ Food

We place great importance on using regional products and preparing them in a refined way. We offer hot meals continuously from 11:00 a.m. to at least 9:00 p.m.

🥂 Drinks

We serve beer from the Rosengarten brewery – Einsiedler beer, one of the few remaining independent Swiss breweries. The co-owner, Alois Gmür (former member of the Swiss National Council), has also represented the interests of the hospitality industry in Parliament. We also produce our own house soda water, which is treated, filtered, and chilled through our in-house system.

🏃‍♀️ Our service system during peak times

As you may have noticed, your order is usually taken via mobile phone. The food and drinks are then generally served by other staff members who do not use a mobile phone. Therefore, we kindly ask you to place any additional orders directly with the service staff using a mobile phone.
